The Cartesa Facilities. As promised, in a previous article we explained that we were starting the installation of a new pork cutting room.

Here’s a brief summary and some photos.

Cartesa is the main operator of the Teruel Designation of Origin, working with the concept of circular economy. They optimize natural resources and enhance both livestock and agriculture to offer customers the best quality and the greatest commitment to the territory.

The cutting rooms have a cutting capacity of up to 250 pigs per hour.

1. FILLET CUTTING LINE WITH FIXED STATIONS.
2. HANGING LINE FOR HINDQUARTERS VERTICALLY.
3. PRIMARY CUTTING LINE: UNHANGING TABLES, CUTTING TABLES, POST-PRIMARY, AND SECONDARY CONNECTIONS.
4. SECONDARY CUTTING LINES, MAIN PRODUCTS: HAM, HINDQUARTERS, BACON, LOIN CHOPS.
5. EVACUATION LINES FOR FILLED BOXES… HAM, HINDQUARTERS, BACON, LOIN CHOPS, FILLETS.
6. FAT EVACUATION LINES (TO BONE AND FAT CHAMBER).
7. FEEDING LINES EMPTY BOXES FROM WASHER TO SECONDARY.
